The Yellow Biquinho Pepper (Capsicum chinense) is a Brazilian variety, originally developed in Minas Gerais, famous for its unique shape and its almost total absence of heat. Its name in Portuguese, "Biquinho", refers to the teardrop shape with a thin point that resembles a small bird's beak.
Heat Level (Mild/Zero): This pepper is at the lower threshold of the Scoville scale, ranging between 500 and 1,000 Scoville Units (SHU). In practice, it is considered a non-pungent pepper. It is the perfect choice for those who want the flavor of the pepper without the heat.
Characteristic Flavor: Despite the low heat, it offers a rich, complex, and tropical flavor. It is notably sweet, fruity, and has a citrusy and slightly vinegary touch. Belonging to the Capsicum chinense species gives it a strong and delicious aroma.
Shape and Color: The fruits are tiny (about 1 to 2 cm long), teardrop-shaped, and mature to a vibrant sun-yellow. They have great visual appeal.
Usage: Its most popular use is in sweet and sour preserves, serving as a gourmet appetizer or garnish. Fresh, it is perfect for adding flavor and color to salads, pizzas, cheeses, and exotic dishes without adding heat. Due to its crunchy pulp, it "pops" in the mouth when consumed.
