The Tondo Calabrese Pepper (Capsicum annuum) is a traditional variety from Calabria, in southern Italy. It produces small, round, cherry-like fruits, combining thick flesh with balanced heat. It is one of the peppers most widely used in Italian cuisine, especially for preserves, antipasti and stuffed peppers.
Tondo Calabrese is a pepper with noticeable heat, typically measuring around 20,000 Scoville Heat Units (SHU). Its heat is clearly perceptible but balanced by the sweetness of the flesh, making it an excellent choice for anyone looking for intensity without compromising the flavour of food.
The fruits are small, round and slightly flattened, measuring approximately 3 to 5 cm in diameter. As they ripen, they change from green to a deep, glossy red. Their flesh is thick, firm and slightly sweet, making this one of the best varieties for stuffing with cheese, tuna or cured meats, as well as for preparing preserves in olive oil or vinegar. They are also excellent fresh or grilled.
The plant has a compact, vigorous habit, usually reaching 50 to 80 cm in height. It produces abundantly throughout the growing season, bearing numerous high-quality fruits. In addition to its culinary value, Tondo Calabrese is highly ornamental, offering a beautiful contrast between its green foliage and bright red ripe fruits.
