Aji Panca is an iconic Peruvian chili, usually classified as C. baccatum (sometimes described as C. chinense), prized for its deep, complex flavour, subtle smoky sweetness and low heat.
A very mild, delicate burn of roughly 5,000 SHU, ideal for enhancing colour and flavour without extreme spiciness.
Complex smoky, fruity and sweet notes reminiscent of prunes, raisins and cocoa.
Its elongated, slightly wrinkled fruits ripen from dark green to reddish brown or deep chocolate. Plants are vigorous and productive.
Essential to Peruvian cuisine, especially anticuchos, marinades, pepper pastes, roasts and stews. Use fresh, as paste or sun-dried and ground into a fragrant dark spice.
Authentic Peruvian flavour with gentle warmth and remarkable depth.
